CLASSIC SUNNY SIDE-UP EGGS | |
I've never been able to make proper sunny side-up eggs until I discovered this recipe. Now, they're a regular here! 4 large eggs 2 tbsp. butter Salt and pepper to taste Paprika to taste Heat a medium non-stick skillet over medium heat. Add butter to lightly coat the bottom of the pan. Crack the eggs into the pan. Season with salt, pepper, and paprika to taste. As the eggs cook, you will see them start to change color. Add 2 tablespoons water and cover the pan. The water will steam the tops of the eggs, preventing them from being runny and make them light and fluffy. Cook until the tops of the whites are set but the yolk is still runny. (About 2-3 minutes.) Divide eggs with edge of a rubber spatula and carefully slide onto serving plates. Serve with toast points for dipping! Serves 2. NOTES: • Be sure to use fresh eggs. • A nonstick skillet is required or your eggs will likely stick, or even burn. Submitted by: Carol |
