LEMON CAKE PIE 
1 tbsp. shortening
1 c. sugar
2 eggs
2 tbsp. flour
1/4 tsp. baking powder
1 c. milk
1 lemon
1 unbaked pie shell
(Gr. rind and juice)

Cream shortening, 1 cup sugar, 2 egg yolks (beaten), 2 tbsp flour, baking powder, milk, lemon rind and juice. Fold in 2 egg whites (beaten), pour into Rich unbaked pie crust. (425 degree) Bake in hot oven for 10 minutes then a 350 degree oven for 45 minutes. Top will resemble a sponge cake and the bottom of custard.
