CHICKEN VERONIQUE | |
12 chicken breasts, boned Salt & paprika 3/4 c. butter 1/2 c. chopped onion 1/2 lb. mushrooms, sliced 1/2 c. flour 2 tsp. sugar 4 c. chicken broth 1/4 c. lemon juice 2 c. seedless green grapes (Grape clusters for garnish) Sprinkle chicken breasts with salt and paprika. Melt 1/2 cup butter in large skillet. Add chicken, brown well on both sides and remove. Melt remaining 1/4 cup butter in skillet; add onions and mushrooms. Cook over low heat for 5 minutes. Blend in flour and sugar. Stir in chicken broth and lemon juice, bring to boil, stirring constantly. Add chicken, cover and simmer 30 to 40 minutes or until tender. Add grapes last 5 minutes of cooking time. |
