RED VELVET CAKE 
1 box yellow cake mix
2 eggs
1 1/3 c. buttermilk
1 tsp. baking soda
1 tbsp. grated coconut
1 tbsp. vinegar
2 bottles red cake coloring

Mix cake, mix eggs, buttermilk, coconut, coloring with mixer. Fold in soda and vinegar. Cook at 350 degrees until inserted toothpick comes out clean.

FROSTING:

1 box confectioners' sugar
8 oz. pkg. cream cheese
1 stick butter
1 tsp. vanilla

Cream all ingredients together and frost cake. You may add chopped nuts or pecans, if desired. Always frost cake when cool.
