APPLE WALNUT CAKE 
4 cups coarsely chopped tart apples
2 cups sugar
2 eggs
1/2 cup vegetable oil
2 teaspoons vanilla
2 cups all purpose flour
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons soda
1 cup chopped walnuts

Combine apples and sugar. Let stand. Beat eggs lightly. Beat in oil and vanilla. Mix and sift flour, soda, salt, and cinnamon.

Stir in alternately with apple-sugar mixture. Stir in walnuts. Pour in greased 9 x 13 inch pan.

Bake at 350°F for 1 hour or until done. Let stand in pan till cool. Serve with whipped cream.
