DEVILED CRAB 
3/4 lb. crabs
1 med. onion
1/4 c. butter
3 tbsp. flour
1 1/2 c. milk
Ritz crackers, crumbled
1/2 tsp. dry mustard
1/2 tsp. salt
1/2 tsp. parsley
1/2 tsp. cloves
2 eggs, yolks

Melt butter in skillet; add crab meat and onion. Cook slow for 5 minutes. Add flour and stir until well mixed. Stir in milk gradually, stirring constantly until mixture boils. Mix dry mustard, salt, chives, and parsley with egg yolk. Add to flour mixture. Cover with Ritz cracker crumbs and melted butter. Bake at 400 degrees until brown.
