DEVILED CRAB WITH FISH
1/2 lb. fish flakes
1/2 lb. crab meat
2 tbsp. chopped onion
3 tbsp. butter
2 tbsp. flour
3/4 c. milk
1/4 tsp. salt
Dash freshly ground black pepper
1/2 tsp. powdered mustard
1 tsp. Worcestershire sauce
1/2 tsp. sage
1/8 tsp. cayenne pepper (or to taste)
Hot pepper sauce to taste
1 tbsp. fresh lemon juice
1 egg, beaten
1 tbsp. chopped fresh parsley
1 tbsp. butter
1/4 c. dry bread crumbs

Remove any shell or cartilage from the crab meat. Cook onion in butter until tender. Blend in flour. Add milk gradually and cook until thick, stirring into egg; add to remaining sauce, stirring constantly. Add parsley, crab meat, and fish flakes. Place in well-greased, individual crab shells or baking dishes. Combine butter and crumbs; sprinkle over top of each. Bake in a moderate oven, 350 degrees, for 15 to 20 minutes or until brown. Serves 6 to 8.
