3/4 cup plain flour 1/4 cup coconut 1/3 cup white sugar 140g butter 1 tsp vanilla essence 2 tsp milk 1/3 cup sultanas or chocolate chips 1/3 cup self rising flour Preheat oven to 350°F (180 degrees Celsius). Grease 2 trays with olive oil. Melt the butter in a saucepan. While waiting for the butter to melt, put the flour, sugar and coconut into a large mixing bowl. Stir with a wooden spoon and add the sultanas (raisins) or the chocolate chips. Add the milk, butter and vanilla essence. Mix it all together with clean hands; roll the mixture into a ball and flatten it down on the tray but not too thinly; otherwise they will burn in the oven. Submitted by: Vanessa |
