GREEK SPINACH WITH RICE
(SPANAKORIZO)
 
2 lbs. spinach, washed and drained
2 med. onions, chopped
1 tsp. chopped parsley and dill
1/2 c. rice, washed with cold water
1/2 c. olive oil
Salt and pepper to taste
Water

Saute onions in heated oil until golden. Add spinach. Add a little water and bring to a boil. Add parsley, dill and rice. Stir, season to taste. Simmer for about 15 minutes or until tender.
