SPINACH WITH RICE 
1 lb. spinach
2 med. onions, chopped
1 tbsp. chopped parsley & dill
1/4 c. rice
1/4 c. olive oil
Salt, pepper & paprika to taste
2 cloves garlic, minced (opt.)

Saute onions, rice and garlic in heated oil until golden. Add the spinach which has been thoroughly washed and drained. Add a little water and bring to boil. Sprinkle the parsley, dill and paprika. Stir, season to taste and allow to simmer for about 15 minutes, or until tender.
