CHOPPED CUCUMBER RELISH 
Pared and cut cucumbers
2-3 onions, chopped
2-3 sticks celery, chopped
1-2 red peppers, seeded and chopped
2 c. sugar
2 c. vinegar
1/4 c. water
1/2 tsp. salt

Let all chopped vegetables stand for a couple of hours or overnight if you wish. Mix sugar, vinegar, water, and salt; bring to a boil. Add vegetables. Pack in jars and process for about 10 minutes until it turns color.
