BARLEY WATER | |
1/2 c. pearl barley 2 1/2 qt. boiling water 2 lemons 6 oranges Brown sugar to taste Put barley in a large saucepan, add the boiling water and simmer over a low heat with the lid on for 1 hour. Squeeze the fruit and keep the juice. Strain the water from the barley, then add the rinds of 1 lemon and 3 oranges. Add sugar. Allow to stand until cold. Strain off the rinds and add the orange and lemon juice. Keep refrigerated. This is a delightful and healthful drink. The British Royal family are addicted to barley water. The Queen usually drinks it in preference to wine. |
