CHEESY CORNBREAD CASSEROLE 
2 pkg. cornbread mix
1 can cream corn
2 c. grated Cheddar cheese
1 1/2-2 lb. ground meat
1/2-3/4 c. chopped onion
1/2-3/4 c. chopped bell pepper (optional)

Mix cornbread as directed using 1/3 less milk than called for.

Combine mixed cornbread, cream corn and 1 cup grated cheese. Brown meat, onion and pepper; drain. Grease bottom and sides of large iron skillet or casserole dish. Layer 1/2 of cornbread mixture in bottom of pan, then all of meat mixture. Cover with remaining cheese (using more than 1 cup if desired). Top with remaining half of cornbread mixture.

Bake at 400 degrees for 30-45 minutes, until done. Casserole will appear moist even though done. Serves 6-8.
