BUBBLE AND SQUEAK (FROM
LEFTOVERS)
 
My grandfather who came from England during the depression did not believe in wasting food. This was just one of the very simple but tasty foods we ate while visiting him and my grandma Sutton. He, at that time, used bacon grease. I have since changed the recipe as it is a healthier alternative in my opinion. My grandfather sometimes ate this for breakfast with an "over easy" egg.

1 cup leftover corned beef, diced
4 cooked red potatoes, diced
1 cup cooked cabbage
1 onion, diced
1 cup cooked carrots, diced
salt and pepper, to taste
3 tbsp. butter
vegetable oil

Warm heavy skillet and add approximately 3 tablespoons of butter and a small amount of vegetable oil to the pan; add the diced onion and let it sweat. Then add all of the other ingredients and cook until warmed through.
