BUBBLE & SQUEAK 
3 tbsp. bacon grease
2 c. leftover mashed potatoes
2 c. leftover cooked cabbage
Salt and pepper to taste

(Even if you have less or more of one or both of the above the recipe will still work well.)

Heat bacon grease in skillet until hot. Add the potatoes, cabbage, salt and pepper and mix together well. Cook over medium heat until lightly browned, turn mixture and continue cooking until lightly browned. Serve hot. This is very good for breakfast with bacon and eggs, or makes a tasty side dish with polish sausage for supper.
