BUBBLE & SQUEAK | |
1 lb sausage (spicy, hot or plain) 1/2 med onion, chopped (red, white, yellow) 2 cups cabbage (cooked & chopped) pinch salt 2 cups white sauce (medium) Preheat oven to 350°F. Butter a 1 1/2 quart casserole. Cook the sausage in a skillet, breaking it up with a fork as it cooks. When no pink shows, transfer it to a bowl. Add the chopped onion to the sausage drippings in the skillet and cook until limp. Add to meat and mix well. Spread the meat in the bottom of the casserole. Cover with cabbage, add salt to taste, then cover with white sauce. Bake 30 to 40 minutes or until bubbling hot. Variation #1: You can add any kind of vegetables you want to this dish - potatoes, carrots, pealed squash or any other vegetables you like, in layers between the meat and the cabbage. Add white sauce. Bake as above. Variation #2: You can make this dish with leftovers Use any kind of meat you have leftover and add the onions to it. Use any leftover vegetables layered over the meat.
