CRACKLING CORN BREAD 
1 c. yellow cornmeal
1 c. flour
2 tbsp. sugar
1 tsp. salt
2 tsp. baking powder
1 1/4 c. milk
2 tbsp. melted butter
2 eggs, well beaten
1 c. cracklings

Sift together meal, flour, sugar, salt, and baking powder. In a separate bowl, beat milk, butter and eggs. Add dry ingredients, beat lightly until thoroughly mixed. Stir in cracklings. Pour batter into a well-greased 9x9x2 inch pan. Bake 45 minutes at 400 degrees.
