CRACKLING CORN BREAD 
2 c. self-rising cornmeal
1/2 c. self-rising flour
1 egg, beaten
2 c. milk
1 c. cracklings, or more if desired

Sift dry ingredients together. Add eggs to milk, stirring to mix; add cracklings which have been chopped in small pieces, mix well. Pour milk and eggs into dry mixture. Pour into well greased pan; bake in moderate oven, 350 degrees for 30 to 40 minutes. Serve hot. 6 servings.
