ROLL-OUT BUTTER COOKIES 
1 c. butter
2 c. sugar
3 eggs
6 tbsp. buttermilk or sour milk (5 tbsp. milk & 1 tbsp. vinegar)
1 tsp. baking soda (add to sour milk before adding to batter & mix to foamy)
1 tsp. vanilla
5 c. flour

Roll out on floured board and cut. (Don't chill dough.) Bake at 400 degrees for about 7 minutes, until light brown on edges or until set. Sprinkle with colored sugars before baking or frost and decorate after baking. To keep cookies soft, store in sealed container until ready to serve.
