INDIAN PUDDING 
7 tbsp. yellow corn meal
1 qt. plus 1 pt. scalded milk (1 1/2 qt. scalded milk)
3/4 c. molasses
2 tbsp. sugar
1/2 tsp. salt
2 c. cold milk
Butter

Slowly add corn meal to scalded milk and cook 20 minutes in double boiler, stirring occasionally. Remove from stove, add molasses, sugar, and salt -- stir and pour into buttered 2 quart pudding pot. Add butter, size of walnut. Pour in the 2 cups cold milk. DO NOT STIR. Bake in moderate oven at 300 degrees about 3-4 hours. Test by inserting silver knife. Should come out clean if done.
