DOROTHY'S ZUCCHINI BREAD | |
3 eggs 1 c. vegetable oil 1 c. raisins 1 c. nuts, ground (I use hickory, pecans & black walnuts) 4 tsp. baking powder 1 tsp. cinnamon 2 c. sugar 2 c. zucchini, peeled & grated (press down firm, don't remove suds) 3 tsp. vanilla 3 c. flour 1 tsp. baking soda Beat eggs well; add sugar and beat. Add oil and grated zucchini and vanilla. Add dry ingredients to mixture; mix well. Add nuts and raisins. Pour into 2 large greased loaf pans or 4 to 5 small pans. Bake at 350 degrees for 50 to 60 minutes. Let cool 3 to 5 minutes before removing from pans. Freezes well. |
