LAYERED MEXICAN BEAN DIP 
3 medium avocados
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
8 oz. sour cream
1/2 c. mayonnaise
1 pkg. taco seasoning mix
2 cans bean dip with jalapenos
1 bunch green onions, chopped
1 tomato, chopped
1 small can ripe olives, sliced
1 8 oz. bag shredded cheddar cheese

Mash avocado, salt, pepper, and lemon juice together in a small bowl.

In a separate bowl, combine sour cream, taco seasoning, and mayonnaise and refrigerate for 1 hour.

In a 9 by 12 dish, spread bean dip. Add layer of taco/sour cream mixture. Then add layer of avocado mixture. Then sprinkle a layer of green onions, followed by olives, tomatoes, and grated cheese. There should be seven layers in all.

Serve with tortilla chips.
