CURRIED SPLIT PEA SOUP 
1 c. green split peas
3 c. water
1 sm. yellow onion
2 tsp. oil
1 lg. carrot
2 celery ribs
1-2 c. additional water
Curry blend
1/2 tsp. curry
1 1/2 tsp. cumin
1/2 tsp. coriander
1/4 tsp. ginger
1/4 tsp. cinnamon
3/4 tsp. salt
1 tbsp. oil

Saute onion, carrot, celery in oil. When limp, add to split pea mixture. Cook the water, peas, and vegetables over low heat until soft and desired thickness. Heat the 1 teaspoon oil in a small fry pan, when hot add the spices and cook briefly, until they give off aroma. Add to the above mixture. Serves 4 to 6.
