HOLIDAY APPLE CRANBERRY BREAD | |
3 c. apples, chopped 2 1/2 c. sugar 1 1/4 c. vegetable oil 1 c. cranraisins 1/2 c. pecans, chopped 3 c. flour 2 tsp. cinnamon, ground 1/2 tsp. nutmeg 1 tsp. baking powder 1 tsp. baking soda 4 jumbo eggs 1 tbsp. vanilla extract Preheat oven to 325°F. In a large bowl, mix apples, sugar, oil, cranraisins and nuts. In a separate bowl, mix flour, cinnamon, nutmeg, baking powder and baking soda. In a third small bowl, combine eggs and vanilla until well blended and add to the apples and mix. Gradually add the flour mixture to the apples and mix well. Pour into 6 small loaf pans and bake for 40 minutes or until done. |
