IMPOSSIBLE BRUNCH PIE 
1 (10 oz.) pkg. frozen chopped broccoli (or spinach or asparagus)
1 c. sour cream
1 c. cottage cheese
1/2 c. Bisquick
1/4 c. melted butter
2 eggs
1 tomato, peeled and thinly sliced
1/4 c. Parmesan cheese

Heat oven to 350 degrees. Grease pie plate. Spread broccoli in pie plate. Beat sour cream, cottage cheese, Bisquick, eggs, and butter until smooth (blender 15 seconds on high).

Pour into plate. Top with tomatoes and cheese. Bake until knife inserted in center comes out clean, 30 minutes. Cool 5 minutes (serves 6-8).

I have added fried crisp bacon, crumbled, or diced ham (or leftover meat, chopped).
