CHICKEN PIZZIOLE 
6 split chicken breasts, boned and skinned
1 (28 oz.) can tomatoes, pureed
1 med. onion, sliced
2 to 3 cloves of garlic, sliced or crushed
6 med. potatoes, peeled and sliced to 1/4 inch
1/2 tsp. oregano
5 fresh basil leaves or 1/4 tsp. dry
Salt and pepper to taste
3 to 4 tbsp. olive oil

Place sliced potatoes on bottom of baking pan. Put 1/2 of the onion and 1/2 of the tomatoes over top. Place chicken on potatoes and pour the remaining tomato over. Add garlic and the other spices.

Drizzle the olive oil over all. Cover with foil and bake about 1 hour or until potatoes are just tender. Remove cover and cook 15 to 20 minutes more. Enjoy! Bake at 350 degree oven. This is great with pork chops, too. Serves 4 to 6.
