BAKED POTATO SALAD | |
6 lg. potatoes 6 eggs, hard-boiled 1 c. chopped onions 1 c. grated Cheddar cheese 3/4 c. bacon bits 1 c. mayonnaise 1/2 c. sugar 2 tbsp. prepared mustard Salt and pepper Cook or bake potatoes with the jackets on. Cool, peel and chop potatoes; add eggs, onions, cheese, and bacon bits. Mix mayonnaise, sugar, mustard, salt, and pepper. Pour over potato mixture and mix well. Put in 9 x 13 inch baking dish. Bake at 325 degrees, uncovered, for 45 minutes to an hour until the potatoes are brown. |
