WEST TEXAS RED CHILI 
1/8 lb. finely chopped suet (fat)
3 lb. round steak, coarsely cubed
6 tbsp. chili powder
1 tbsp. ground oregano
1 tbsp. ground cumin
1 tbsp. salt
1/2 tsp. red pepper
2 lg. cloves garlic, minced
1 1/2 qts. water
3 tbsp. Masa Harina or 1/2 c. white cornmeal

Fry suet until crisp; add steak cubes and brown, add seasoning and water; heat to boil. Reduce heat, cover and simmer for 30 minutes. Stir occasionally. Add masa, stir until thick. Serve with beans and cornbread. Serves 8 to 10.
