IRENE'S TEXAS HOT CHILI 
2 lbs. beef stew (lean)
2 med. onions, chopped
4 tbsp. oil
2 tbsp. chili powder
1 tsp. cumin
1 tsp. paprika
1 tbsp. white pepper
Ginger (sliced fresh), to taste
1 (1 lb.) can stewed tomatoes
2 tbsp. tomato paste
2 cans beef broth
Mushrooms, sliced with lemon juice and green onion (optional)
Garlic to taste

In a large Dutch oven, brown meat in oil with garlic and onions. Add all the other ingredients; stir until well mixed. Simmer on burner for 1 1/2 hours or until done. Stir occasionally while cooking. Serves 4-6. This is hot, so you may want to omit the pepper or ginger!
