RED HOT TEXAS CHILI MEATLOAF | |
1 c. quick-cooking oatmeal 1 (12 oz.) can whole tomatoes, cut up 3 jalapeno peppers, chopped 2 garlic cloves, minced 1 egg, slightly beaten 2 tbsp. chili powder 1 tbsp. red pepper sauce 1 tbsp. cumin seed, crushed 1 tsp. oregano 1 tsp. cayenne pepper 2 lbs. lean ground beef In large bowl, combine all ingredients except beef. Add beef, mix well. Pat mixture into 9x5x3 inch loaf pan. Bake at 350 degrees for 1 hour. For a milder meatloaf, omit jalapeno peppers and red pepper sauce and reduce chili powder to 1 tablespoon. Serves 6. |
