TEXAS CHILI 
6 lb. ground round
3 onions, chopped
4-6 cloves garlic, chopped
3 tbsp. oil
32 oz. canned tomatoes
24 oz. tomato sauce
3 tsp. cumin
2 tsp. paprika
32 oz. red kidney beans
5 tbsp. chili powder
2 tbsp. red chili (cayenne)
1 square unsweetened chocolate
1 can beer
1 tbsp. sugar
1 qt. water
2-3 jalapeno peppers, diced
5 c. cubed white potatoes, peeled

In very large pot, brown meat and onions in oil. Add tomatoes and sauce. Add remainder of ingredients. Cook over low heat for 2 1/2 hours. Add extra water, if necessary. Serves 20.
