CHICKEN OR TURKEY DIVAN | |
3 lg. chicken breasts, skinned & boned (or about 4 c. turkey tenderloin, cut into bite size pieces) 2 pkgs. frozen broccoli, thawed & squeezed to remove water 1 can cream of chicken or mushroom or celery soup 1/2 c. mayonnaise 1/2 tsp. lemon juice 1/2 c. grated cheddar cheese Place raw broccoli in a 7"x10" casserole dish. Cover with RAW chicken or turkey. Sprinkle lightly with thyme or poultry seasoning. In a 2 cup measurer, mix mayonnaise, 1/4 cup cheese, soup and lemon juice. Cover chicken with mixture and top with remaining cheese. Bake at 350 degrees for 1 hour. Makes 5 to 6 servings. |

I used chicken tenderloins and cream of chicken soup. Instead of frozen I used fresh broccoli steamed for about two minutes.
Modifications were some chopped fresh mushrooms and a chopped jalapeno pepper in the soup mixture, a mix of fresh herbs (mainly thyme) from the garden and some fresh grated Parmesan cheese for the topping.
