CUSTARD PIE 
FILLING FOR 7 INCH PIE:

2 eggs, slightly beaten
1/4 c. sugar
3/4 tsp. vanilla
1/8 tsp. salt
2 c. milk, heated
Nutmeg

FILLING FOR 9 INCH PIE:

3 eggs, slightly beaten
1/3 c. sugar
1 tsp. vanilla
1/4 tsp. salt
3 c. milk, heated
Nutmeg

Combine eggs, sugar, vanilla and salt. Gradually stir in hot milk. Combine well, don't beat. Sprinkle with nutmeg. Bake in moderate oven at 375 degrees, about 40 minutes or 50 minutes for large pie. To test, insert tip of silver knife in filling about center. If custard is done, knife will come out clean. Cool before serving. My husband's favorite.
