MASHED POTATOES WITH FINE HERBES
FOR 2
 
2 med. potatoes, peeled and cut
2 tbsp. sour cream
1/4 tsp. salt
Pepper and fine herbes

Cook potatoes in boiling water about 20 minutes. After cooked, put potatoes, sour cream, salt, pepper and herbes in small mixer bowl. Beat on medium speed until potato mixture is smooth.

Place two or more mounds of potato mixture onto a cookie sheet lined with aluminum foil (for a fancier look, use a pastry bag with a star tip and pipe mixture into mounds). Broil potatoes 4 inches from heat about 5 minutes or until light brown.
