EASY COCONUT PIE 
1/2 c. butter
1 1/2 c. sugar
3 eggs, slightly beaten
1 tsp. vinegar
1-3 tsp. vanilla
1 can flaked coconut
1 unbaked pie shell

Cream the butter and sugar together until fluffy. Add eggs, vinegar, and vanilla. Fold in the coconut. Spoon the filling into the pie shell. Bake in a preheated 325 degrees for 45 minutes.
