"DIRTY" RICE 
1 c. long grained rice
1 tbsp. butter
2 c. water
3 tbsp. sweet pepper (red or green)
2 patties pork sausage (hot or regular) 1/2" thick finely chopped
2 tsp. salt
1/4 tsp. pepper (red or black)

Add water, rice and butter in saucepan, bring to a boil. Cook for 1 minute, stirring rice. Reduce heat to lowest setting and cover rice. Cook until all water is absorbed by rice, stirring occasionally.

Saute sweet pepper and sausage in frying pan on low heat. After sausage is cooked, drain fat and let set.

Just before rice is finished add sweet pepper, sausage, salt and pepper. Stir frequently and add seasonings to taste.
