MAW MAW'S DIRTY RICE | |
2 c. UNCLE BEN'S® converted rice (cooked) 2 lbs. lean ground chuck 1 lb. Jimmy Dean mild pork sausage 1 c. chopped onion 5 chopped shallots 1/3 c. chopped parsley 4 tbsp. Lea & Perrins Worcestershire sauce Salt and pepper to taste 1/2 tsp. ground bay leaf 1/2 tsp. ground thyme 2 tbsp. butter Prepare rice according to package directions and set aside. In a skillet, brown ground chuck and pork sausage in a small amount of cooking oil and season with salt, pepper, bay leaf and thyme. Mix well and cook until well done. Remove to colander to drain all grease from meat. Use a large deep pot for your mixing bowl. Place cooked meat in this pot. Next, add butter to drained skillet and saute onions, parsley, and shallots for about 5 minutes. Mix these into the meat and add the cooked rice, blending until it is evenly distributed. Stir in the Lea & Perrins sauce. Place in a casserole dish and bake for 25 minutes at 350 degrees. Serves 8. |
