DIRTY RICE | |
1 c. long-grain rice 2 c. water 1 lb. chicken livers 1 stalk celery, chopped Salt & pepper 1 green pepper, seeded & chopped 2 med. onions, chopped 2 tbsp. oil Cook the rice and set aside. Put livers, celery, peppers and onions into food chopper or processor until finely chopped. Heat oil and add the liver mixture. Cook on medium heat, stirring easy. When the mixture began to look beady cover and cook 30 minutes or until golden. Stir in the rice by lifting it through the rice, heat again. Season to taste and serve. This may be used as a main dish or a side dish with fried chicken. Use ground beef or sausage instead of livers make a change. Be sure to drain the grease off before you add to the rice. |
