CANDIED FRUIT CAKE | |
1 lb. dates 1 lb. walnuts, whole unsalted 1 lb. candied cherries 1 1/2 c. Brazil nuts, whole unsalted 6 slices candied pineapple, cut into chunks 1 1/4 c. raisins 1 1/2 c. sugar 1 1/4 c. flour 1/2 tsp. salt 1 tsp. baking powder 6 beaten eggs Mix fruit and nuts together in a large bowl. Mix dry ingredients and sprinkle over fruit and nuts. Add beaten eggs and mix by hand. Bake about 1 hour at 300 degrees. The number of fruit cakes will depend on the size of the loaf pan that you use. Grease and flour your pans. |
