SALATA 
Greens (lettuce, Escarole, Romaine, Endive)
Tomatoes
Cucumbers
Radishes
An chovies
Black olives (Greek)
Feta cheese

DRESSING:

1 part lemon juice or wine vinegar
3 parts olive oil
Salt and pepper to taste
Sprinkling of oregano

Tear greens into bite sized pieces. Cut tomatoes into wedges and cucumbers into slices. Mix all dressing ingredients together and pour over mixed vegetables. Fresh mint leaves give a delightful flavor.
