SLICE OF SPICE COOKIES | |
1/2 c. shortening 1/2 c. butter 2 c. brown sugar, packed 2 eggs 1 tsp. vanilla 3 c. all-purpose flour 1 tsp. baking soda 1 tsp. cream of tartar 1/2 tsp. salt 1 c. quick cooking oats, uncooked Combine butter, shortening, and brown sugar. Cream until light and fluffy. Add eggs, beating well; stir in vanilla. Combine next 4 ingredients. Add to creamed mixture, mixing well. Stir in oats. Chill one hour. Divide dough into 3 portions and shape each into 12 inch roll. Carefully wrap each roll in wax paper and place on cookie sheet. Chill 4 to 5 hours. Combine 1/2 cup sugar and 4 teaspoons cinnamon, mixing well. Cut cookies into 1/2 inch slices; dip each slice in cinnamon and sugar mixture. Place on greased cookie sheet. Bake in 350 degree oven for 10 minutes. Makes about 8 dozen. |
