AUNT ESTHER'S BUTTERSCOTCH
COOKIES
 
4 c. brown sugar
1 c. butter or shortening
4 eggs
1 tbsp. baking soda
1 tbsp. cream of tartar
1 tsp. salt
1 tsp. vanilla
7 c. flour, sifted
1 c. chopped nuts (optional)

Cream together shortening and brown sugar; add eggs and mix well. Sift dry ingredients together and add to shortening mixture. Stir in vanilla and nuts, if desired. Add small amount of milk or water if mixture is too dry.

Make into a roll or rolls, wrap in waxed paper and put in refrigerator overnight. Slice about 1/4 inch slices and bake in 375 degree oven for approximately 10 minutes. Makes lots of cookies!
