1 sm. head cauliflower
1/2 c. mayonnaise
1 tsp. Dijon mustard
3 drops Tabasco
1/4 c. shredded cheddar cheese

Clean and trim head of cauliflower by taking out some stem, but keeping the head whole. Place cauliflower on a dish and cover with plastic wrap. Microwave on high for 7 minutes or until tender when knife is inserted into stem. Keep covered until ready to serve. Mix mayo, mustard, Tabasco together. Cover top of cauliflower with mixture and sprinkle with cheese. Microwave on high for 1 1/2 minutes and serve.
