CAULIFLOWER AU GRATIN 
1 med. head cauliflower (about 1 lb.), separated into flowerets
2 tbsp. water
1 tbsp. butter
1 tbsp. all-purpose flour
1/2 c. milk
1 tsp. prepared mustard (optional)
1/4 tsp. salt
1/2 c. shredded Cheddar cheese (about 2 oz.)
1/8 tsp. paprika

Place cauliflowerets and water in 1 quart casserole; cover. Microwave full power until tender, 7-10 minutes, stirring after half the cooking time. Drain and set aside.

Place butter in 2 cup measure. Microwave Full Power until melted, 30 seconds to 1 minute. Stir in flour. Blend in milk, mustard and salt. Microwave PL7 until thickened, 2-5 minutes, stirring every minute. Stir in cheese until melted. Pour over cauliflowerets; sprinkle with paprika. Yield 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
