COUNTRY SAUSAGE AND POTATOES AU
GRATIN
 
3/4 to 1 lb. smoked sausage
1/2 c. chopped onion
1 tbsp. oil
1 pkg. Au Gratin Potatoes
2 1/2 c. hot water
1/4 tsp. pepper
1/2 (16 oz.) frozen broccoli, cauliflower and carrot mix (thawed and drained)

Cook and stir sausage and onion in oil in large skillet. Stir in potatoes, sauce mix, and water and pepper. Heat to boiling; reduce heat. Cover and simmer, stirring occasionally 15 minutes. Stir in thawed frozen vegetables. Cook 10 minutes. Add 1 cup shredded cheddar cheese and cook until melted. Makes 4-5 servings.
