COUNTRY SAUSAGE AND POTATOES 
1 1/2 lbs. hot or sweet Italian sausage
3 lg. potatoes cut in bite size chunks
2 med. size onions, quartered
1 clove garlic, crushed
1 sm. head Chinese cabbage or escarole coarsely shredded

In large skillet over medium heat cook sausage until brown on all sides. Remove with slotted spoon; set aside. Over medium heat cook potatoes, onions, and garlic until brown.

Cut sausage into bite size chunks and return to pan. Add 1/2 cup water and bring to boil. Reduce heat; cover and simmer 25 minutes. Add cabbage; cover and simmer 5 minutes. Serves 4-6.
