COUNTRY POTATO SOUP 
2 lbs. potatoes (4 or 5 potatoes)
2 qts. chicken broth
1/2 c. chopped onion
1/4 stick butter

Peel potatoes and cut into cubes. Cook in broth until tender. Saute onions in butter. Combine mixtures and return to heat. Then add:

1 c. Half and Half cream
1/2 c. milk
Salt to taste
A dash red pepper

Taste for seasonings. Can be served topped with chopped chives or chopped red onions. Serves 12-14 people.
