COUNTRY POTATO CHEESE SOUP 
2 tbsp. butter
6 lg. potatoes, diced
1 or 2 med. onions, chopped
3 stalks celery, chopped
2 c. chicken broth or chicken bouillon
1 c. milk or half and half
2 c. Colby or American cheese
Salt and pepper to taste
Optional: diced ham

In medium saucepan melt butter; add potatoes, onions, and celery. Saute 5 minutes, stirring often. Add broth or bouillon; cover and simmer until vegetables are tender.

Put mixture in blender and blend until smooth or mash to desired consistency with a potato masher. Return to heat; stir in milk or half and half. Add cheese; heat until melted. Add optional ham bits. Serves 4.
