HAM AND CAULIFLOWER AU GRATIN | |
1 tbsp. butter 1/2 med. sized cauliflower, broken into florets (about 2 c.) 1 sliced celery stick 1/2 tsp. salt 1/4 ground pepper 1 green pepper, seeded and cut into 1/4 inch wide strips 1 c. coarsely shredded Mozzarella and Cheddar cheese 1/2 lb. cooked ham, cut into 2 1/2 inch wide strips (about 1 2/3 c.) In 10 inch skillet melt butter over moderately high heat. Add cauliflower and celery. Sprinkle with salt and pepper. Reduce heat to moderate and cook 7 minutes. Add green pepper and ham. Cover. Cook 5-7 minutes or until green pepper is crisp-tender and ham is hot. Sprinkle with cheese and let stand 1- 2 minutes until cheese has melted. Makes 4 servings.
