1 med. head cauliflower
2 tbsp. water
1 (8 oz.) jar cheese spread
1 tomato, chopped

Cut and remove a cone-shaped piece from center of cauliflower core. Place cauliflower with hole end down in dish; add water. Cover and microwave on high until cauliflower is just tender, 8 to 10 minutes. Drain. Remove cover from cheese spread, microwave cheese in jar until softened, 30 seconds to 1 minute. Pour over cauliflower. Garnish with tomato. 6 servings.
